Melaka Asam Pedas




Asam Pedas is one of signature dish for Malacca. Its look same as Asam Pedas Johor but the irony is Asam Pedas Melaka have slightly different taste with Asam Pedas Johor. The reason of this different taste is the ingredients.

Asam Pedas Ikan Parang /Wolf Herring Fish Sour and Spicy Stew 

Ingredients :
A
3 pieces of Wolf Herring Fish
5 cloves of red onions that already crushed
5 cloves of garlic that already crushed
5 table spoon (tbsp) of coking oil

B
1 inch of fresh turmeric that already crushed
Little bit of turmeric powder
1 inch of  belacan ( fermented shrimp paste)
10-15 of Fenugreek seed (halba)
4 or 5 tbsp blended chilies
Tamarind juice
Salt
Own Choices of vegetables
Ladyfinger (Bendi) or Eggplant.

Methods :
1. Stir-fry the Fenugreek  till turn to yellow colour and toss it.
2. Use the oil from stir-fry Fenugreek, put in the onions, garlic and turmeric.
3. Cook it until turn to yellow colour and give an unique aroma.
4. Put in the blended chilies and belacan till it crisp.
5. Pour certain amount of water and tamarind juice.
6. After the broth is boiling, put in the fish.
7. Boil it till the fish is cook.

Tips :
  • Use fresh fish
  • Asam Pedas should have a balance sour and spicy taste
